If you're not into cooking then try cooking a lot at a time and freezing. Rice freezes well. Stir-frying frozen veggies is a quick way to get a meal. Keeping fresh veggies cut up and at hand is almost a must, you can just grab em and use for a salad or as dippers for hummus or some other dip type dishes. Cans of beans save me several times a week. It's easy to open a can rather than to soak and cook beans, even tho I believe it would be healthier to cook my own. Maybe next week.

You can start off by cooking slow this way and then build up your freezer so that when you do feel like trying a new recipe you will have backup basics already at hand.
I'm new to the gluten free world and I don't know if other grains freeze well. Maybe someone can comment on this. Quinoa, millet and buckwheat cook much faster than brown rice but it would be nice to have bags of grains on hand for quick run & go meals.
