My husband is having this issue as well. We were fine as vegetarians but now that we're GF, too - he's like "I'm starving." So - we're very new to this but I feel that we'll figure it out in time. We're just "snacking more" during the day - on healthy stuff like apple/peanut butter, boiled egg, nuts.
I realize it's harder on a vegan vs vegetarian diet, so I'm looking forward to reading the suggestions others give you.
