Default Cheeses

Hi -

I've read that gorgonzola and blue cheese may be no-no's but then other times people say it isn't an issue. What's the truth?!

I don't have celiac but definitely have gluten-sensitivity and can feel it in my joints when I eat gluten. I ate a salad the other day and couldn't figure it out until I started googling and realized there was gorgonzola on the salad. I'm thinking that must be the culprit -- I'm still discovering my triggers.

Should gluten-sensitive people be avoiding these cheeses? And why - is it kind of like the issue with oats, it's not so much the food itself but the way it is processed?
