I contacted the owner of Global Cafe in Lawrence, KS to find out if she had any gluten-free options on the menu. One of the highlights of the cafe are arepeas - cornbread sandwiches. Here is her reply. As far as gluten free goes we do have some options available: Arepas - These are made with ground corn flour which we mix with water, the flour we use contains no preservatives and such. We offer 5 varieties but would be happy to take any of our sandwich options and make them with an arepa instead of bread. We do offer 4-5 salads at lunch and dinner time all of which should be ok (ceasar salad has croutons) but most of our dressings are made in house excluding the ranch and blue cheese but should be ok (the sesame ginger does include soy sauce and this is also used with any tofu served so you would want to ask them to leave it off). Pinchos - This is a dish consisting of 3 kabobs of your choice meat, tofu, or veggie and is served with yellow rice and black beans and a parsley mojo which is only parsley, oil, salt and pepper. These would all be available at lunch time. The dinner menu includes many options for entrees. I will tell you this.....we make nearly everything from scratch and do not use any preservatives, stabilizers, etc. The one thing we do use in some of our soups and sauces is a concentrated chicken stock in which the lable reads: Concentrated chicken stock, salt, hydrolyzed corn protein, natural flavor, disodium inosinate, disodium guanylate, citric acid, turmeric.
