IgE are the allergies that are immediate, these can be anaphylactic but not always.IgG allergies are delayed allergies or sensitivities and happen anywhere from 3 hours to 3 days later. These are usually less severe and while uncomfortable, are rarely life threatening (not anaphylactic, but say can cause chronic diahhrea or bloody stools) these can also sometimes be "healed". We have illiminated my sons IgG's and now, a year later, he can tolerate a few of the things he would react to before. During this year, we have worked hard at healing his gut, he takes digestive enzymes when he eats, and take strong probiotics every day to heal his but.
GF= gluten free CF= casein free can also mean corn free SF= soy free EF=egg free
YF= yeast free

I am new to being gluten free. I have NOT been diagnosed with celiac, but my dotor recommended a gluten free diet to numerous health issues. I am prone to intestinal issues and my 19 yr ol daughter also has some undiagnosed problems. We have begun the journey together. I am also medically recommended vegetarian.

After two weeks of gluten free I noticed an amazing improvement in my skin. I also discovered the difficulty in eating out and shopping. Thanks for having a site to help others with these issues. As you all know it can be very expensive to try out products only to find out they taste like junk.

Anyway, i look forward to sharing with all of you!

Congrats, it only gets easier... more and more places are taking notice of the GF "revolution" like Unos and Italian restaurants etc.

Default get vegetarian looking to become vegan. Any advice?

Hi. I have been gluten free for approx 2 years and vegetarian for about 8 months. I am really considering becoming Vegan for mainly health reasons but worry that becoming vegan Is only complicating and already Complex diet and am a little by the prospect. Does anyone have any advice or comments for me? All comments are more than Welcome. Thank You. x

Hi Katy. Welcome .

I am vegan and gluten free and don't find it overly complicated. I guess it is just perspective. It can be *inconvenient* when eating out, but simpler is better anyway. Fresh whole fruits and veggies are always gluten free.

thank you for your comment. It is actualyy porveing to be easier than I thought. The main problem as you metioned is of course eating out or when you dine with friends. The only concern I have at the moment is the lack of calcium in my diet, do you have any tips or ideas?
Appart from that all is going well, i am being well aquainted with my bean and pulses, soya and of course loads of veggies!

calcium can come through soy milk, tofu, and some veggies. If needed, supplements, as well. ALSO - do not neglect Vit. D or calcium will not be absorbed. Aim for at least 1000 mgs/day, which will likely require a supplement.

The RDA for calcium is inflated. It has been well documented that in societies where they eat plant based diets and get as little as 300mg of calcium per day there is no osteoporosis. It is caused by excess protein in the diet. Your body leeches calcium when it flushes away all the protein. If you are eating a well rounded, varied whole foods vegan diet you do not need to worry about supplementing any vitamins except possibly B12. If you live in an extreme northern latitude and get little sun exposure you may need a vitamin D supplement in the winter. Otherwise you should be fine.

Perhaps, but remember the societies that eat a plant based diet also get far more weight bearing exercise (walking, carrying, planting, etc.) than most of us do. That also helps preserve bone.
As someone who was just recently diagnosed with celiac and then went for what should have been a baseline bone density test, I learned I was already at a level that is categorized as osteoporosis, even though my calcium intake was high and I eat a plant based diet. My Vitamin D levels were tested and found to be far below the norm.
We think the undiagnosed celiac led to malapsorption of both over the years.
So, perhaps it has to do with age of diagnosis of celiac, at least in part, will indicate a possible need for increased levels of these vital nutrients.
