We shop for bulk rice at a local Asian market and then fill the bag with Bay leaves or freeze the rice to keep the bugs out. The garden really helped this summer. You can eat very simply and cheaply and still eat fresh. The most expensive stuff we buy is our treats, premade stuff like fake ice cream and my partner's wine.
Do what they used to do in the old days and still do in other cultures. Make a filler item that the family has to eat first or eat as the primary element of your meal. Rice, corn meal mush, potatoes, beans. These are cheap and filling. Then the more expensive flavorings, the items which are more labor intensive to prepare (all of your veggies), those are more like toppings or sides. Make family eat leftovers the next day for breakfast or lunch or as another side with the next day's dinner. Eat them alone or round them out with some tofu, fresh fruit, whatever.
