Unfortunately, Potbelly Bread is not gluten free. They neither offer it nor have it in stock. While gluten-sensitive diners can order the sandwich toppings, there is no bread or other support for them. So, you’ll have to bring your own.

Cast Iron Wood-Burning Stove

What makes Potbelly so unique is that they use a cast iron wood-burning stove with a round bulge at the center. They bake their sandwiches piping hot so customers can enjoy the comfort of warm bread, seasoned meat with melted cheese. This is invaluable on cold days, especially in Chicago.

Part of the reason why they can’t offer gluten-free bread is the way they cook their sandwiches in this massive wood-burning stove. Even if they had the bread and cleared a dedicated space, they still wouldn’t be able to guarantee the sandwich is free of contamination.

Therefore, if you bring your own bread, don’t expect to have it toasted. They won’t guarantee it won’t come to you contaminated.

Ingredients

Potbelly does not list the ingredients of their bread. But, guaranteed, it does have wheat flour. So, while it isn’t gluten free, all breads are free of shellfish, fish, peanuts, tree nuts and milk. All types of bread offered by Potbelly contain soy except the Flat Bread.
