Adding a tablespoon of milk to the butter helps account for the liquid that evaporated during the browning process. Gluten-free flour needs extra liquid to prevent chalky cookies.
Use high-quality flour like King Arthur Measure-for-Measure flour or Bob’s Red Mill gluten-free 1:1 baking flour. Adding almond flour helps the cookies turn GBD (golden, brown, and delicious!). Brown sugar makes the cookies chewier, while vanilla extract helps to balance the sweetness.
Like other baked goods, you’ll need to allow the dough to rest. This way, the gluten-free flour can hydrate and create a softer, chewier cookie. The dough only needs to rest for about 30 minutes at room temperature.

Whisk the gluten-free flour, almond flour, salt, and baking soda until combined in a medium bowl. Then, begin to melt the butter in a saucepan on medium heat. You’ll need to constantly whisk it as it begins to melt. Once the butter solids turn brown, turn off the heat and pour into a heat-resistant bowl.
Add milk, white sugar, and brown sugar to the butter while whisking. Then add the vanilla and egg and whisk until creamy and smooth. Here you can stir in chocolate chips, walnuts, m&ms, or dried fruit. Cover the bowl and let it rest for thirty minutes while the oven preheats to 350 F.
When ready, place two tablespoons of dough a couple of inches apart on baking sheets. Bake for 10-12 minutes.
