Ingredients

Gluten-Free Crumbl Cookie Recipe

For this recipe you will need the following ingredients:

  • 2 large eggs
  • 1.5 cups of gluten-free flour blend 
  • 1/2 cup of softened butter
  • 1/2 cup of brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon of pure vanilla extract
  • 1 teaspoon of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/8 teaspoon of salt

If you wish to add cinnamon sugar then you will also need the following:

  • 1/4 cup of white sugar
  • 1/2 teaspoon of ground cinnamon

If you also wish to ice your cookies you will need:

  • 1.5 cups of powdered sugar
  • 1/4 cup of softened butter
  • 1 tablespoon of milk
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon of cinnamon (to taste)

Method

Gluten-Free Crumbl Cookie Recipe
  1. Make sure that you preheat the oven to 350 degrees. Allow the oven to fully heat up before cooking the cookies.
  2. In a large bowl mix, together all of your dry ingredients for the cookies. This includes the gluten-free flour blend, sugar (white and brown), baking powder, salt and cinnamon. Stir to combine.
  3. In a medium-sized bowl, combine together all your wet ingredients for the cookies. This includes the butter, eggs and pure vanilla extract.
  4. If you are making the cookies using a stand mixer please note that you should first combine all of the wet ingredients in the stand mixer and then slowly add in the combination of your dry ingredients. This will give you the best results and a smooth, perfect texture.
  5. If you are mixing by hand you will want to slowly add in your wet ingredients into your dry ingredients. Make sure that your bowl is big enough for all of the ingredients so that it doesn’t overflow. Mix until combined.
  6. In a small bowl, combine the white sugar and cinnamon to make the cinnamon sugar.
  7. Once your cookie dough is completely combined, you will need to decide how big you want to make your cookies. If you have a cookie dough scoop (or even an ice cream scoop) then this is a great tool for making evenly-sized cookies. If you do not have access to these tools you can simply guess and try to make them as even as possible.
  8. Roll the scoops of cookie dough into balls.
  9. Roll the cookie dough balls in the cinnamon sugar, making sure to cover all of the dough evenly.
  10. Place the sugar-coated cookie dough onto a baking tray lined with parchment.
  11. Lightly press down on each ball, but not too much so that it is flat.
  12. Place in the oven and bake for 12 minutes.
  13. Remove from the oven and leave to cool.
  14. Next, you will need to make the frosting. To do this you will need a mixer, both a handheld mixer and a standmixer are fine. Whisk together the frosting ingredients (powdered sugar, butter, milk, pure vanilla extract and cinnamon). Whisk until combined and smooth.
  15. Choose a piping bag with a small rounded tip and place the frosting into the piping bag.
  16. Start to ice the cookies from the center and slowly spiral outwards, making sure to cover the entire top of the cookie.
  17. If desired, you can top the frosted cookies with any leftover cinnamon sugar.
  18. Place the cookies in the fridge to set the frosting.
